Ingredients


1 cup (8 oz) full-fat coconut milk
1 1/3 cups (8 oz) dairy-free dark chocolate chips or finely chopped dark chocolate (for ganache)
1/2 tsp peppermint extract
2 tsp Chaga Mushroom
1 1/2 cups dairy-free dark chocolate chips (for coating)
4 candy canes, crushed or finely chopped

Instructions
  1. Begin by gently heating the coconut milk in a small saucepan. Bring it just to the brink of boiling, then remove from the heat. Stir in the peppermint extract.
  2. Place the 1 1/3 cups of dark chocolate chips or chopped chocolate into a medium-sized bowl. Pour the hot coconut milk over the chocolate.
  3. Allow this mixture to sit undisturbed for about 20-30 seconds. Then, starting from the centre and moving outward, whisk the mixture gently. This technique helps to prevent splashing while ensuring the chocolate and coconut milk blend into a smooth, creamy ganache. Whisk in the Chaga Mushroom until smooth.
  4. Refrigerate the ganache for a few hours to allow it to firm up.
  5. Once the ganache is set, use a tablespoon or a cookie scoop to portion it out. Quickly roll the portions into balls. The warmth of your hands will soften the chocolate, so it's important to work swiftly. Place the formed truffles on a parchment-lined tray and chill them again for 15-20 minutes.
  6. For the chocolate coating, melt the remaining 1 1/2 cups of chocolate chips. Do this in a microwave-safe glass bowl, using 30-second bursts in the microwave, stirring between each burst until the chocolate is completely melted and smooth.
  7. Dip each truffle into the melted chocolate, allowing any excess to drip off. Then, place them back onto the parchment paper. Immediately sprinkle the tops with the crushed candy canes.
  8. Allow the truffles to set by placing them in the refrigerator. Keep them chilled until you're ready to serve these yummy peppermint treats.
