Christmas Grinch Truffles

Ingredients

. ½ cup almond flour
· ¼ cup oat flour
· ¼ cup cacao powder
· 2 tablespoons pure maple syrup
· 2 tablespoons dairy-free milk of choice
· ½ cup vegan dark chocolate chips
· 1 ½ teaspoons coconut oil
· Melted white chocolate with food colouring

Method

1- In a mixing bowl, combine the almond flour, oat flour, cacao powder, maple syrup, and milk. Stir until the mixture forms a smooth, cohesive dough.
2- Use a tablespoon-sized scoop to portion out the dough, then roll each portion into a ball between your hands. Arrange the balls on a small tray or plate lined with parchment paper.
3- Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each session, until the chocolate is fully melted and silky smooth. Be careful not to overheat!
4- Dip each ball into the melted chocolate, ensuring it’s completely coated. Place the chocolate-covered balls back onto the parchment paper.
5- Transfer the tray to the fridge and let the treats chill for at least an hour before coating with white chocolate, chilling again then digging in. Enjoy your delicious, chocolatey bites!
