Hot Chili Chicken Noodles with Sesame
Here is a delicious homemade alternative to that naughty takeaway! This HOT CHILI CHICKEN NOODLES with SESAME is sweet, salty, crispy, sticky and a little bit spicy but just enough to be yummy.

Hot Chili Chicken Noodles with Sesame


Serves 2

Ingredients

135g noodles of choice
2 chicken breasts
1 large garlic clove, crushed
2 handfuls of edamame beans
1 spring onion, finely sliced

Chili Sauce Mix

1 Tablespoon Coconut Hot Chili Sauce
1/2 teaspoon sesame oil
1 Tablespoon cooking oil
1/2 Tablespoon Coconut Cider Vinegar
1/2 Tablespoon sesame seeds
1 spring onion, finely sliced
juice of 1/2 lemon

Method

Chili Sauce Mix

  1. Add coconut hot chili sauce, sesame oil, cooking oil, coconut cider vinegar, sesame seeds and spring onion into a bowl and mix together.

 

Noodle Mix

  1. Cook noodles as per directions on pack and drain.
  2. Bring a small sized pot to the boil and cook the edamame beans, for approx. 2 mins.
  3. Meanwhile slice the chicken breast into 2 cm chunks and place in a bowl. Add half of the chili sauce mixture and toss to coat.
  4. Add garlic to the chicken and place into a preheated frying pan, frequently rotating until cooked through.
  5. Combine cooked noodles, edamame beans, chicken and remaining chili sauce mixture in a large bowl. Squeeze over lemon juice.
  6. Divide into 2 serving dishes and top with extra spring onions and sesame seeds.
